Belgian baker Pidy has launched its ‘Say It With Flowers’ range of pastry cases, a simple but sophisticated way of serving both sweet and savoury options for the springtime buffet menu.
The flowershaped pastry cases are made using Pidy’s special technique to ensure the delicate pastry stays crunchy even when the fillings are added well in advance of eating.
The Flowers range comes in two varieties: the Corolle, which is based on a poppy and the Iris, which offers a deeper fill. Both are supplied ready-baked and ready-tofill. They are 4cm in diameter and are available in catering packs of 96, 192 or 480 pastry cases.
Pidy has developed a new gourmet pastry for this line. The pastry, which is midway between filo and shortcrust, is golden yellow in colour, and is made using sunflower oil rather than hard fat. This ensures the pastry retains its shape, without going soggy, even if left filled for several hours. It has a crunchy texture and neutral flavour.
